Banana Walnut Muffins

Tried banana walnut muffins for the first time and came out superb. Have overripe bananas lying in your kitchen? Try these yummy muffins...These are made with half wheat flour, half maida and olive oil so quite healthy.. Here goes the recipe:



Ingredients :

  • 1/2 cup wheat flour
  • 1/2 cup all purpose flour (maida)
  • 2 overripe bananas mashed
  • 1 egg
  • 1/3 cup castor sugar
  • 1/3 cup olive oil
  • 1 tbsp vanilla essence
  • 1/2 tsp baking powder
  • a pinch of soda
  • a pinch of salt 
  • 3-4 tbsp of milk
  • handful of walnuts roughly chopped

Method:

  • Preheat the oven at 180 degrees C.
  • In a big bowl, mash bananas thoroughly, add oil, sugar and vanilla to this. 
  • In another bowl, whisk egg and add to banana mix and mix everything nicely.
  • Sift together flours, baking powder and salt.
  • Add flour mix to banana mix in 2 batches and mix well.
  • Since the batter would be too thick, add little milk to make it smoother. Do not add too much milk, batter should be thicker than cake batter.
  • Now add walnuts to the batter and pour the batter in muffin moulds.
  • Pop them in oven and bake for approx. 30 min.
Yummy, healthy and wholesome muffins are ready to eat :)
