Oats Upma

Oats are one of the healthiest food options today, but thanks to the 'boring' tag stuck firmly it is no surprise that many people still don't keep them in their menus.

How about using oats to prepare something really healthy and more suitable to our taste buds?

Oats Upma can be prepared by either using whole oats (simple oats packets sold by Quaker, Saffola or Horlicks) or using powdered oats. While the former is easier, the latter has more resemblance to traditional upma made with semolina (suji or rawa in Hindi) and both are rich in fibre and other oatsy-goodness.

Oats upma tastes best if you add plenty of vegetables to it, more the merrier.

Start with frying finely chopped onions with little oil in a wok. When onions turn golden brown, add chopped tomatoes and cover the wok. After a minute add salt, black pepper (or red chilly powder) and turmeric powder according to your taste preference.

Now the veggies, add whatever of these you have at home: chopped carrots, chopped beans, chopped spring onions, thinly sliced potatoes, chopped or diced mushrooms, small florets of broccoli or cauliflower, cubes of paneer or tofu, green peas and corn.

Add some water and cover the wok so that all the vegetables get cooked properly. You can even microwave the vegetables and add them to the wok now. Once the vegetables are cooked properly add oats and water. Stir the wok properly so that lumps are not formed. Let the mixture simmer for 3-4 minutes. Stir the wok to ensure entire mixture has been cooked uniformly and no lumps are there.

That's it, your delicious oats upma is ready. Garnish with corriander leaves and serve with sauce or chutney.
