Veggie-cheese rolls

Putting vegetables in the mouth of a two and a half year old is a challenge every parent faces everyday. I am no exception.

This recipe was conceived in one of the thought marathons aimed at preparing something that is nutritious yet tasty enough for her to eat.


For preparing 4 rolls we need:


  • 1 mid-sized carrot.
  • 1 mid-size potato
  • 1 bowl green peas
  • 1/2 bowl corn kernels
  • Finely chopped onions (optional)
  • 4 bread slices
  • 4 cheese slices
  • oil or butter to shallow fry the rolls


Boil the vegetables and mash them. Add salt and pepper according to your taste.
Moisten the bread and flatten it so that is fit to be rolled.
Put a layer of the mixture on the bread and spread it evenly. Make sure it is not too thick.
Put a slice of cheese on top. (If you want to add any seasonings or sauces this is the time.)
Roll the bread and make sure all the fillings are contained within the roll.
Put some oil or butter on a griddle (tawa) and shallow fry the rolls till they are golden brown on all sides. (You will have to keep on 'rolling the roll' to ensure that!)

Cut the roll with a sharp knife in bite sized pieces.
Serve with sauce or chutney.
