Veg sushi with Tahini dip

Sushi is a Japanese dish which consists of cooked rice combined with other ingredients, most often raw fish. Often confused with Sashimi (which is just sliced raw fish), Sushi can be vegetarian as well. We once had a vegetarian sushi in a fancy Japanese restaurant in Delhi where rice was mixed with what seemed like ghee and salt! Needless to say it was very disappointing considering the price we paid for it.

So I found this recipe and just improvised it a bit to make it tastier, healthier and lot more colorful :)



Ingredients:

  • Bunches of spinach (250-300 grams).
  • Sticky (cooked) rice, 1 cup (you can use cottage cheese as well)
  • 50 gms each of vegetables like corn, carrots, beet root, red and green bell pepper
  • 1tsp lemon juice
  • Salt and pepper as per taste
  • Sushi or bamboo mat


Method:

  • Clean the spinach properly and discard the stalks (stem part). Don't trim the leaves.
  • Blanch the spinach in microwave or pressure cook it for 3 whistles.Don't add any water because spinach looses water when heated. 
  • Drain out the water completely from the spinach and let it cool.
  • Chop the vegetables finely as shown and microwave them with lemon juice on high for 2 minutes. The idea is to get the vegetables tender and let the tangy flavor of lemon seep into them. You can do this on gas-stove as well!

  • Spread the spinach on bamboo mat.
  • Spread the sticky rice over the spinach.
  • Spread the vegetables and sprinkle salt and pepper on the vegetables.

  • With a sharp knife cut the rolled spinach.


Tahini dip

Sushi is usually served with wasabi but I decided to go for a little east - middle-east collaboration and serve it with Tahini, which is an Arabian dish and is usually served with hummus, and it turned out to be good.

Ingredients:
  • 1 cup of sesame seeds (til)
  • 1tsp lemon juice
  • 1 Green chili
  • Salt, red chili powder as per taste
  • Olive oil
  • 4-5 cloves garlic

Method:

  • Dry roast the sesame seeds on hot tawa for few seconds
  • In a bowl add all the ingredients (including the roasted sesame seeds) salt, lemon juice, olive oil, green chilies salt and garlic.
  • Blend it in a mixer to form a smooth paste.

Keep the sushi in fridge for a while so that it is cold but not chilled. Serve with Tahini.
