Veg Manchurian Gravy

Vegetable Manchurian Gravy is delicious indo-chinese recipe prepared with spicy and flavorful sauce. Fried balls are prepared with vegetables like cabbage, carrot, capsicum etc. It perfectly goes with schezwan fried rice/ noodles. 

The most time taking part in making manchurian is the chopping/ grating of vegetables. You can use food processor to save the time here.



Ingredients:

For manchurian balls:

  • 1 cup shredded cabbage
  • 1 cup very finely chopped carrots (Can use grated carrots as well)
  • 1/2 cup very finely chopped capsicum
  • 1/4 cup finely chopped french beans
  • 1/4 cup finely chopped spring onions/ scallions
  • 1 tbsp finely chopped ginger
  • 1 tbsp finely chopped garlic
  • 1 finely chopped green chilli
  • 1/3 cup Maida
  • 2 tbsp Cornflour
  • Oil for frying
  • Salt and pepper to taste

For gravy:

  • 1/4 cup finely chopped spring onions/ scallions
  • 1 tbsp finely chopped ginger
  • 1 tbsp finely chopped garlic
  • 1 finely chopped green chilli
  • 1 tbsp oil
  • 3 tbsp cornflour mixed with water (slurry)
  • 2-3 tbsp soy sauce
  • 1 tbsp green chilli paste
  • 1-2 tbsp red chilli paste
  • 1 tbsp tomato ketchup
  • 1/2 tbsp vinegar
  • 1-1/2 cup water
  • Salt and pepper to taste

Method:

For making balls:

  •  Take all the ingredients (except oil) in a bowl.
  •  Mix them well so that you get a dough like consistency (No need to add water as veggies would leave water)
  • Take a small portion of the mixture and roll it in your palms to make round balls.
  • Make all the balls and keep them aside.
  • Meanwhile take oil for deep frying in a pan. Oil should be medium hot.
  • Deep fry prepared balls until dark golden brown and crisp from outside. 
  • Remove and spread them on kitchen paper towel/ napkin to drain extra oil.

For making gravy:

  •  In another pan, heat 1 tbsp of oil and add ginger, garlic. Saute for few minutes till raw smell of ginger garlic goes away and then add green chilli and spring onions.
  • Saute for few more minutes and then add all the sauces along with 1 cup water and salt and pepper.
  • Let the water boil for 1-2 minutes and then add slurry of cornflour and water.
  • Cook it for 2-3 minutes and pour the gravy on fried balls while serving.
  • Garnish with spring onions and enjoy it with fried rice or noodles :)
