Bread Pudding a.k.a Shahi Tukda

I have a story to tell before I start explaining this recipe. I had a potluck in my office and being pregnant (I had the privilege of not having to cook anything, just eating!), I thought preparing something easy like 'Chhole' (chickpea curry) won't do any harm. However my husband and mother-in-law were super excited and they wanted me to take something good for the party, so we decided on 'bread pudding'. Easy to prepare and absolutely delicious.


Ingredients

  • Slices of milk bread 10
  • Milk 1.5 liters.
  • Cream or Cornflour 2 spoons, if you use toned milk.
  • Dry fruits as per your choice (almonds, raisins, cashewnuts, pistachios etc.)
  • Sugar as per taste
  • Cardamoms 2
  • Ghee or oil for frying


Method


  • Add cardamom and sugar to the milk.
  • Thicken the milk. If you are using full cream milk, simmer it till it reduces to half its initial volume. If using toned milk, simmer it till it reduces and add cornflour or cream to thicken it. Once done it should have a creamy consistency and just the right sweetness for your taste. Add more milk/cornflour if you think it is too sweet to balance the taste.
  • Remove the edges of bread slices with a sharp knife and cut each slice in 4 squares. If you want you can divide the slice diagonally into two triangles as well.
  • Chop the dry fruits fine.
  • Deep fry the bread pieces in ghee. Drain excess oil with help of an absorbent paper.
  • Arrange the bread pieces in a flat and wide utensil. Pour milk and cover with a layer of chopped dry fruits. (Let me reiterate that if your milk is not creamy in texture it will melt the bread.) Repeat the same process. I could add 3 layers one on top of the other. 
  • Cool it in the fridge so that milk permeates the bread nicely and also gets a little harder.
