Vegetable Manchurian Gravy is delicious indo-chinese recipe prepared with spicy and flavorful sauce. Fried balls are prepared with vegetables like cabbage, carrot, capsicum etc. It perfectly goes with schezwan fried rice/ noodles.

Ingredients:
For manchurian balls:
- 1 cup shredded cabbage
- 1 cup very finely chopped carrots (Can use grated carrots as well)
- 1/2 cup very finely chopped capsicum
- 1/4 cup finely chopped french beans
- 1/4 cup finely chopped spring onions/ scallions
- 1 tbsp finely chopped ginger
- 1 tbsp finely chopped garlic
- 1 finely chopped green chilli
- 1/3 cup Maida
- 2 tbsp Cornflour
- Oil for frying
- Salt and pepper to taste
For gravy:
- 1/4 cup finely chopped spring onions/ scallions
- 1 tbsp finely chopped ginger
- 1 tbsp finely chopped garlic
- 1 finely chopped green chilli
- 1 tbsp oil
- 3 tbsp cornflour mixed with water (slurry)
- 2-3 tbsp soy sauce
- 1 tbsp green chilli paste
- 1-2 tbsp red chilli paste
- 1 tbsp tomato ketchup
- 1/2 tbsp vinegar
- 1-1/2 cup water
- Salt and pepper to taste
Method:
For making balls:
- Take all the ingredients (except oil) in a bowl.
- Mix them well so that you get a dough like consistency (No need to add water as veggies would leave water)
- Take a small portion of the mixture and roll it in your palms to make round balls.
- Make all the balls and keep them aside.
- Meanwhile take oil for deep frying in a pan. Oil should be medium hot.
- Deep fry prepared balls until dark golden brown and crisp from outside.
- Remove and spread them on kitchen paper towel/ napkin to drain extra oil.
For making gravy:
- In another pan, heat 1 tbsp of oil and add ginger, garlic. Saute for few minutes till raw smell of ginger garlic goes away and then add green chilli and spring onions.
- Saute for few more minutes and then add all the sauces along with 1 cup water and salt and pepper.
- Let the water boil for 1-2 minutes and then add slurry of cornflour and water.
- Cook it for 2-3 minutes and pour the gravy on fried balls while serving.
- Garnish with spring onions and enjoy it with fried rice or noodles :)
